Honey BBQ Chicken Rice

Honey BBQ chicken rice is a simple and satisfying meal that comes together with just a few ingredients. Tender chicken is coated in a sweet and smoky honey barbecue sauce and served over warm rice for an easy dinner the whole family will enjoy. It’s the kind of comforting meal that works well for busy weeknights but is still flavorful enough to feel special.

This recipe is also very versatile and easy to customize. You can add roasted vegetables, corn, or a fresh salad on the side to round out the meal. Whether you are looking for a quick dinner idea or a simple meal prep option, honey BBQ chicken rice is a delicious and practical recipe to keep in your rotation.

Ingredients:

  • 1c rice
  • 3 Chicken thighs
  • 1/2 onion
  • 2 garlic cloves
  • 1c bbq sauce
  • 1/4c honey
  • 2T cocoa aminos

Equipment

  • Skillet
  • Spatula
  • 1c measuring cup
  • Instant pot
  • garlic press

How to make Honey BBQ Chicken Rice

Cook rice in the instant pot

Add 1c of rice to the instant pot and add 1:1 ratio of water to rice for white rice or 2:1 ratio of water to rice fro brown rice. Seal the instant pot and cook for 20 minutes. Let it release pressure naturally to finish cooking the rice.

Saute the onions

Add 1-2T of oil or butter to a skillet over medium heat. Slice 1/2 an onion and sauté it.

Brown the meat

While the onion sautés, chop 2-3 chicken thighs. Once the onions are mostly translucent, add the chicken. Peel and mince 2 cloves of garlic into the skillet. Season with 1/2t salt and 1/4t of ground pepper. Brown the meat, stirring occasionally.

Simmer the sauce

Once the meat is browned, add 1c of barbecue sauce, 1/4c honey, 2T soy sauce or cocoa aminos. Stir and cook for 3-5 minutes until it starts to thicken.

Serve

Serve over rice with a side of veggies.
