Cowboy Butter Chicken Pasta

If you’re looking for a quick, flavorful dinner that feels a little special without much effort, Cowboy Butter Chicken Pasta is the perfect choice. This creamy pasta is packed with garlic, lemon, herbs, and a little kick of cayenne for a bold, buttery sauce that coats every bite.

Tender chicken and freshly grated Parmesan make it rich and satisfying, while the simple ingredients keep it easy enough for a busy weeknight. It’s the kind of comforting meal that comes together fast but tastes like something you spent much longer making.

Ingredients:

  • 16 oz pasta
  • 4 tablespoons unsalted butter or olive oil
  • 4 garlic cloves, minced
  • Juice of 1 lemon
  • 1 teaspoon salt
  • Black pepper, to taste
  • 1 teaspoon cayenne pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons dried parsley
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup Parmesan cheese, freshly grated
  • 2c rotisserie chicken (shredded or chopped)

How to make Cowboy Butter Chicken Pasta

Add the pasta to the Instant Pot, cover with water, seal, and cook for 7 minutes. Manually release pressure once it’s finished cooking. Drain and toss with olive oil to keep it from sticking to itself.

While the pasta cooks, grate the parmesan cheese and prepare the sauce.

Place a skillet over medium heat. Add the butter or olive oil and the minced garlic. Cook for about 30 seconds, until the garlic becomes fragrant.

Add the lemon juice, salt, pepper, cayenne, Italian seasoning, parsley, heavy cream, and chicken broth Stir well and let the sauce simmer for about 5 minutes.

Add the grated Parmesan cheese and stir until it melts into the sauce.

Pour the sauce over the cooked pasta, add the cooked chicken, and toss until everything is evenly coated. Serve warm.
