Sourdough coffee cake is a cozy treat that’s perfect for slow mornings and afternoon coffee breaks. The sourdough starter adds a subtle tang and tender texture, while the buttery crumb topping brings just the right amount of sweetness. It’s a simple, comforting bake that makes your kitchen smell wonderful and pairs perfectly with a warm cup of coffee.

Ingredients

  • 2 cups flour (245 g)
  • ⅓ cup sourdough starter (100 g)
  • ¼ teaspoon salt
  • 3 eggs
  • ½ cup oil or melted butter (108 g)
  • 1 cup sugar (200 g)
  • 2 teaspoons baking powder

Streusel Ingredients

  • 1/4c flour
  • 1/4c sugar
  • pinch of salt
  • 2t cinnamon

How to make Sourdough Coffee Cake

Add all the ingredients except the baking powder to a large mixing bowl and mix until thoroughly incorporated.

Cover and allow it to ferment at room temperature for 6-8 hours (or warm environment in the cooler months like in the oven with the light turned on or overnight in the counter).

When you are ready to bake, preheat the oven to 350.

Line a cake pan or casserole dish with wet parchment paper.

Add the baking powder to the batter and whisk it in. Pour the batter into the baking dish.

Mix together the streusel and top the batter generously.

Bake for 60 minutes or until an inserted knife comes out clean.

Cool on a wire rack for 30 minutes to an hour before serving.

Save it for later…
